Pantry Friendly Recipes: One Pot Cheesy Chicken Pasta

Everyone has some kind of pasta or another hiding out on their pantry shelves.  This one pot cheesy chicken pasta is a quick and easy meal you can prepare on busy weeknights.  The noodles are cooked in chicken stock before they are combined with chicken, cheese, vegetables, and cream of chicken soup.  This super fast recipe is guaranteed to become a family favorite.

One Pot Cheesy Chicken Pasta

Ingredients:

1/2 yellow onion, chopped into a 1/4 inch dice
2 tablespoons butter
3 cups chicken stock or low sodium chicken broth
8 ounces wide egg noodles or other wide pasta
1 cup frozen vegetable medley
 1 (10 1/2 ounce) can cream of chicken soup
1 cup shredded cheddar cheese
1/2 cup whole milk (2 percent or 1 percent milk will also work) 
1 1/2 cups cooked chicken, chopped
freshly ground black pepper, to taste

Directions: 

Step 1: Heat a large saucepan over medium high heat.  Add the butter and onions to the pot.  Cook the onions for 5 to 7 minutes until they appear translucent and have begun to soften.  Add chicken stock and bring the liquid to a boil.

Step 2: Stir in uncooked egg noodles, cover and simmer for 5 minutes, stirring occasionally.

Step 3: Add the frozen vegetables and cover.  Continue to simmer the noodles for an additional 5 minutes or until they are cooked and most liquid is absorbed.

Step 4: Add the cream of chicken soup, cheddar cheese and milk, mix well until all the ingredients are combined.

Step 5: Stir in chicken and freshly ground black pepper. Serve immediately.
