Super Easy Savory Pies that are Ready in Minutes

There is a reason that this is not the first time we've shared savory pie recipes - it's a ridiculously easy meal that is ready in just minutes.  The beauty of the savory pie is that it's more of a method than a recipe so you can customize it to include the ingredients that are in your fridge right now.  Essentially, a biscuit-like pie dough is topped with a variety of fillings including ground meat, eggs (like the recipes here), cheese, and vegetables.  You can easily convert any these recipes to be gluten-free by using a wheatless biscuit dough, either homemade or a store bought mix.  If you're in need of quick and easy meals, savory pies are a good place to start.

Quesadilla Pie

1 can (4.5 ounces) Old El Paso™ chopped green chiles, well drained
2 cups shredded Cheddar cheese (8 ounces)
1 teaspoon chopped fresh cilantro
3/4 cup Original Bisquick™ mix
1 1/2 cups milk
3 eggs

Heat oven to 400ºF. Grease 9-inch pie plate. Sprinkle chilies, cheese and cilantro in pie plate. Stir remaining ingredients until blended. Pour into pie plate. Bake 25 to 30 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Serve with salsa if desired.

Italian Sausage Pie

1/2 lb bulk Italian pork sausage
2 cups Green Giant™ Steamers™ frozen mixed vegetables, thawed, well drained
1/2 cup Original Bisquick™ mix
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs

Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook sausage over medium heat 8 to 10 minutes, stirring occasionally, until no longer pink; drain. Spread sausage in pie plate. Sprinkle with vegetables. In medium bowl, stir remaining ingredients until blended. Pour into pie plate. Bake 30 to 35 minutes or until top is golden brown and knife inserted in center comes out clean. Let stand 5 minutes before serving.

Chicken and Broccoli Pie

2 cups Green Giant™ frozen broccoli cuts, thawed, drained
1 1/2 cups shredded Cheddar cheese (6 oz)
1 cup cut-up cooked chicken or 2 cans (5 oz each) chunk chicken, well drained
1 medium onion, chopped (1/2 cup)
1/2 cup Original Bisquick™ mix
1 cup milk 1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs

Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Sprinkle broccoli, 1 cup of the cheese, the chicken and onion in pie plate. In medium bowl, stir remaining ingredients with wire whisk or fork until blended. Pour into pie plate. Bake 35 to 38 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake 1 to 2 minutes longer or until cheese is melted. Let stand 5 minutes before serving.
