Caprese quinoa salad from Averie Cooks is a light and healthy Meatless Monday dish. Caprese salad is one of my favorite summertime dishes because it's so simple but so good.
While many people feel that the mozzarella is the star, to me, the tomatoes have to be absolutely stellar. When tomatoes are freshly picked off the vine, they taste like the garden. I like to use mini heirloom tomatoes for this salad when I can find them because each one has their own distinct flavor but at the same time still tastes like tomato.
The quinoa adds a boost of protein and brings the whole salad together. I could eat a whole bowl of this on its own but you can serve it with balsamic grilled tofu on the side. For full recipe instructions, click here.
