Vegetarian Buffalo “Chicken” Spinach Salad with Rice

We love easy “bowl food.” A few simple ingredients already on hand make lunchtime meals quick and healthy. We filled our bowl with fresh baby spinach, topped it with warm brown rice and a Boca Chik'n Patty and gave it a drizzle with Buffalo sauce. It's an easy lunch to pack up for the office, too! 

Vegetarian Buffalo “Chicken” Spinach Salad with Rice
Makes 1 serving

1 large handful (or 1 cup packed) baby spinach
1 green onion, chopped
1 cup cooked brown rice
1 Boca Chik'n Patty, cooked and chopped
Buffalo wing sauce, to taste
 

Cook chik'n patty in the microwave for 1 minute. Cut into strips or chunks and set aside.

Place spinach in a bowl. Top with warm rice, the chik'n patty and green onions.

Drizzle buffalo sauce and top and serve.
