Super Easy Sauteed Kale

Sauteed kale with garlic and lemon is one of the easiest side dishes you'll ever cook.  Garlic is heated in a skillet with olive oil before the kale is added.  A squeeze of fresh lemon juice at the end adds acidity and flavor to this leafy green vegetables.  This recipe works great as a base for many sauteed kale dishes.  Feel free to add stewed tomatoes, white beans, mushrooms, onions and any other ingredients that inspire you.

Sauteed Kale

2 tablespoons olive oil
2 cloves garlic, minced
1 head dino or curly kale, chopped
1 lemon, juiced
Red chili flakes, optional

Heat oil in a large skillet. Add garlic and saute for 30 seconds. Add kale and toss to coat in oil. Squeeze lemon over kale, add chili flakes (if using) and cook until kale is starting to wilt. Serve on platter with remaining lemon juice squeezed on top.
