Chimichurri, an incredibly versatile Argentinian sauce, is a huge dinner saver when you just want a simple, satisfying meal. It’s a flavor-packed option for quickly marinating steaks or even silken cubes of tofu, as in this recipe from The Stone Soup.

300g (10oz) hunk firm tofu
2 large handfuls baby spinach
8-10 tablespoons chimichurri sauce
