Game Night: White Chili Frito Pie

White chili frito pie is perfect game day food.  This quick and easy chicken chili is flavored with garlic, smoky bacon and green chiles.  The chili is layered generously over Frito corn chips and topped with plenty of cheddar cheese.  You can take this dish tailgating or make it for a crowd to enjoy in front of the TV.

White Chili Frito Pie


1/2 pound bacon, fried & crumbled
1 onion, chopped
5 1/2 pounds chicken breasts, diced into 1 inch pieces
1 cup water
1/2 cup green chili, chopped (vary to taste)
1 bag Frito Lays chips
1 block of your favorite cheddar (I prefer Cabot extra sharp)
Cut the bacon into bite sized pieces and cook completely in a 2 quart or larger sauce pan; remove from pan, set aside and empty all of the grease except for a thin pan coating
Sauté the onion and garlic in in the bacon pan
Add the chicken and cook until done, about 3 min.
Add the remaining ingredients, bring to a boil and then let simmer for 10 minutes
Layer each serving bowl with the Chile Blanco, topped with a layer of Fritos and a generous serving of cheese; microwave briefly to melt the cheese.
