Meatless Monday: Pumpkin Gnocchi with Basil and Parmesan

Go meatless on this fine fall Monday with this gnocchi recipe from Easy Cook - Laka Kuharica. The cool weather always calls for recipes that make you feel like you're been snuggled by your favorite blanket (and pumpkin is always a nice added touch). Plus, who doesn't love a great, fresh pasta recipe? 

Pumpkin Gnocchi

- 1kg pumpkin, baked and cooled
- 2 whole eggs
- 1/2 tsp sea salt
- 1/4 tsp pepper
- Fresh basil leaves, chopped
- 250g wheat flour
- 250g corn flour
- Olive oil
- Parmesan or Grana Padano cheese, grated
