Chocolate chip coconut cookie bars are a gluten-free, dairy-free treat that will be a household favorite. Sweetened shredded coconut is combined with chocolate chips to create a moist cookie that you just can't have one of. Instead of sweetened condensed milk, a homemade dairy-free version is created with almond milk, agave nectar, an chia seeds.
Gluten-Free Coconut Cookie Bars
Ingredients:
2 cups Blanched Almond Flour
1 cup Tapioca Or Arrowroot Flour
1/2 teaspoon Sea Salt
1/2 teaspoon Baking Soda
1/2 cup Earth Balance Butter, Room Temperature
1 tablespoon Vanilla Extract
1 cup Chocolate Chips, Dairy Free
2 cups Sweetened Coconut, Divided
1/2 cup Almond Milk, Or Preferred Milk Alternative
1 1/2 tablespoons Chia Seeds
