Mother's Day Brunch: Berry Cheese Blintzes

Berry cheese blintzes are a brunch dish that the whole family will love for Mother's Day.  Thin crepe-like pancakes are stuffed with a sweet cheese mixture and folded to resembled a burrito.  They are pan fried in butter until golden brown and delicious.  Each blintz is topped with sour cream and berry sauce.  You can also use fresh berries if they are in season for this recipe.

Berry Cheese Blintzes

Ingredients:

10 prepared crepes
2 tablespoons orange juice
2 tablespoons sugar
3 tablespoons butter
 
Directions:
 
Drain cottage cheese in strainer at least 20 minutes. Pat dry with paper towels.
 
Blend cottage cheese, orange juice, sugar, and egg yolks in medium mixing bowl until well combined.
 
Add 2-3 heaping tablespoons cheese mixture into center of crepe.
 
Fold crepe in on both sides, then fold from bottom to top twice (like a burrito).
 
Melt small amount of butter in frying pan (just enough to brown crepes).
 
Brown folded crepes in butter on each side until golden.
 
Microwave berries on high for 2-3 minutes, stirring occasionally, until warm.
 
Spoon berries over crepes.
 
Top with dollop of sour cream.
