Rainbow Shamrock Cookies are a St. Patrick's Day Treat

Rainbow shamrock cookies from Bake at 350 are a St. Patrick's Day treat.  These double-decker  sugar cookies are intricately decorated, one as a shamrock and the other is a rainbow.  The key to decorating them is to outline the design with royal icing first before coloring it in.  Let the cookies dry overnight before serving them.  To add sanding sugar, brush the designs with a mixture of water and meringue powder and sprinkle the sugar on top.  A detailed decorating tutorial is available on the website.

royal icing, divided and tinted with AmeriColor leaf green, bright white, super red, orange, egg yellow, sky blue and regal purple
disposable icing bags

squeeze bottles
meringue powder
small paintbrush
white sanding sugar
