This vegan sushi recipe from Noms for the Poor is delicious and satisfying. Quinoa is wrapped with creamy avocado and earthy shitake mushrooms in toasted nori to make a sushi roll that even non-vegans will love. Quinoa is used to replace traditional sushi rice but feel free to substitute with brown rice or another whole grain. Also, add other vegetables like cucumber or red bell pepper to change the flavor profile. You can find most of these ingredients at your local grocery store or health food store. Vegan sushi with quinoa and avocado may not be for the purist but it's darn tasty (and healthy) nonetheless.
Ingredients:
Scant 1/2 cup Uncooked Quinoa
2 - 4 tbsp Rice Vinegar
2 Sheets Toasted Nori (available in most health food, bulk & well-stocked grocery stores)
1/2 an Avocado
4 Shitake Mushrooms
Equipment:
Bamboo Sushi Rolling Mat ("makisu" - these are inexpensive, around $2 each, and you can easily find them in Chinatown, but you could also buy them online if necessary)
