These salmon cakes are a simple meal made in minutes. The good news is you only need 5 ingredients. This dish is a great way to use up leftover salmon fillets. You can also make this with canned salmon if fresh is not available or too expensive. I like to serve my salmon cakes with a dollop of creme fraiche and a light green salad, maybe arugula tossed in lemon juice and olive oil.

1/4 red onion, diced
1 teaspoon capers
1 egg
1/2 cup panko
