We have little baby carrots in the garden! They are no more than a nibble, but to the 4 year old who planted the seeds, these carrots are nothing short of magical.
I love raw carrots. Cooked carrots - notsomuch. They are ok in things, but my inner child just can't get past the mushy texture. How do I get around this? I just don't serve carrots plain as a side dish. There are so many ways to use them, it's never a problem. Here are a few favorites:
