Today is National Blueberry Pie day. This invokes visions of a classic comfort food bursting with berry goodness, but also of a very sweet dessert that can cause a massive spike in blood sugar. This doesn't have to be so. Blueberry pie is about to get a modern makeover to become a nutrient dense treat that anyone can enjoy! The nuts and seeds help balance the sweetness from the fruit so it does not create a rapid spike in blood sugar. There is no need to even use sugar when making fruit desserts. This raw pie allows the natural flavors from the fruit to really shine.
Nutrient Dense Blueberry Pie
4 cups organic blueberries
2 cups organic apple/pear, chopped into small pieces
3/4 cup organic dates
2 tbsp fresh, organic lemon juice
2 tbsp organic hemp seeds
Nut Crust
1 cup raw almonds
1/2 cup raw walnuts
1/2 cup raw Brazil nuts
1 tbsp maple syrup
1/4 cup organic dates
1 tsp Himalayan salt
Directions for crust: put all ingredients in a food processor and mix until smooth. Next press into a pie pan evenly. Then put crust in freezer for 15-20 minutes to firm it up.
For filling: Put apple/pears, dates, lemon juice into food processor and blend until mixture becomes liquid. Next, put blueberries in a large bowl and pour liquid mixture over them. Mix together. Take crust out of freezer and pour blueberry mixture into crust and voila' a blueberry pie that will satisfy your cravings while nourishing your mind and body!
