Epic Quinoa Veggie Burgers
Ingredients
1/4 cup quinoa, rinsed
1/2 cup vegetable broth
1 can black beans, rinsed and drained
1 clove garlic, finely chopped
2 tablespoons white onion, finely chopped
1 carrot, peeled and finely chopped
2 scallions, finely chopped
2 tablespoons sesame seeds
2 teaspoons red pepper flakes
1 teaspoon salt
1 teaspoon pepper
1 egg
1/4 cup breadcrumbs
1 tablespoons olive oil
4 hamburger buns and your favorite toppings (I used lettuce, tomato, onion, pickles, dijon mustard)
Preparation

Combine the quinoa and vegetable stock and cook according to package directions.

Meanwhile, in a large mixing bowl, mash the beans using a fork or potato masher. Add the garlic, white onion, carrot, scallions, sesame seeds, red pepper flakes, salt, pepper, egg and breadcrumbs. Mix well.

Add the cooked quinoa until combined.

Divide the mixture into four balls and flatten each one out into burger patties.

Add the olive oil to a pan and heat over medium-high heat.

Add each patty and cook for about five minutes, flip and cook for about 5 minutes longer.
