Jalapeno Black Eyed Peas

Ingredients

1/2 RED BELL PEPPER (CHOPPED FINELY)
4 GREEN ONIONS- SLICED THINLY
2 smalls ROMA TOMATOES -CHOPPED INTO DICE
1/2 teaspoon PEPPER
1/2 teaspoon GARLIC SALT
1 JALAPENO (MORE TO TASTE) SLICED THINLY
1 FRESNO PEPPER SLICED THINLY

Preparation

RINSE AND PLACE THE PEAS IN A LARGE SAUCE PAN. COVER WITH WATER (OR VEGETABLE BROTH IF DESIRED).

ADD THE PEPPER, GARLIC SALT AND ORANGE PEEL. BRING TO A LIGHT BOIL,

REDUCE HEAT AND SIMMER FOR 15 MINUTES, OR UNTIL PEAS START TO BECOME TENDER. REMOVE THE ORANGE PEEL.

ADD THE RED BELL PEPPER, GARLIC, TOMATOES, JALAPENO, FRESNO PEPPER, ORANGE JUICE AND MOST OF THE CILANTRO. SIMMER FOR 5 MINUTES MORE.

ADD THE LEMON JUICE. LADLE INTO BOWLS, GARNISH WITH THE ADDITIONAL CILANTRO AND SERVE IMMEDIATELY.

SALT & PEPPER TO TASTE.
