Pear Clafouti

Ingredients

50 grams flour, plain
300 mls milk
50 grams sugar (caster)
1 teaspoon lemon juice
teaspoon cinnamon, ground
1 tablespoon butter
1 tablespoon icing sugar

Preparation

Sift flour into mixing bowl, make a well in the center and pour in the eggs. Stir thoroughly, gradually adding the milk, and beat well.

Peel, core and slice the pears and mix with the sugar, lemon juice and cinnamon.

Grease a 20cn baing dish or cake tin. Stir 3/4 of the pears into the batter and pour into the tin, arrange remaining pears over the top in a decorative overlapping fashion. Brush with melted butter and bake in oven 180C/350F for 40 minutes.

Serve sprinkled with icing sugar.
