Navratan Korma Recipe

Ingredients
1 cup Cauliflower florets-
1 cup Mixed Vegetables-
2 tablespoons Butter-
2 tablespoons Cashew nuts-
2 tablespoons Khus Khus-
1 Onion- big
3 Green chilies (minced)-
1 tablespoon Curd- (should not be sour)
1 tablespoon Fresh cream-
8 Pineapple – small pieces
50 grams Paneer/ Indian cottage cheese- (cubed)
12 Raisins-
Salt to taste
1 teaspoon Jeera/cumin seeds-
For garnishing

Boil all the vegetables till soft but not mushy .It should be cooked but firm. Add capsicum and cauliflower at the end as they need very less time to get cooked.

Shallow fry paneer and keep it aside .

Blanch, split and sliver almonds

Then add ginger garlic paste and green chilies. Saute for a few minutes .Then add the cashew nut paste. Cook till oil separates.

Navratan means nine gems. As 9 different ingredients which includes fruits, vegetables, nuts and paneer are used to prepare this kurma, it gets the name Navratan korma.Navratan Kurma is less spicy and has a slight sweet taste because of the fruits and nuts used .
