Brown Ale-Brined Breakfast Sausage

Ingredients

2 pounds ground pork
12 ounces brown ale
2 teaspoons salt
2 teaspoons dried sage
1/2 teaspoon red pepper flakes, or to taste
1 teaspoon smoked paprika
2 tablespoons bread crumbs

Preparation

Place pork in a large glass bowl and cover with brown ale and salt. Cover bowl and chill overnight.

Drain pork well and mix in sage, pepper, marjoram, pepper flakes, paprika and bread crumbs,

Form into 6 patties and saute over medium heat for 10-12 minutes, turning often, until browned and cooked through.
