Zucchini Oatmeal Muffins

Ingredients

2 1/2 cups flour
1 1/2 cups sugar
1/2 cup oatmeal
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
4 eggs, beaten
1/2 cup oil

Preparation

Mix dry ingredients and sugar

Add eggs and oil

Stir until just moistened.

Fold in the fruit, zucchini,nuts.

Spoon into paper muffin cups. Bake 425 degrees 20 minutes Cool in pan 5 minutes.

Turn out on a wire rack.

About

I am not a big zucchini bread fan, but I had a huge bounty of zucchini to use. I started fiddling with a few recipes and this is what I came up with. I have used whole wheat flour with not problem. Also, I have substituted applesauce for some of the sugar with good results.
