Hungarian Goulash

Ingredients

2 onions, sliced
2 teaspoons salt
1/2 teaspoon ground black pepper
2 pounds beef stew meat, cubed
6 ounces tomato paste
1 1/2 cups water
1 clove garlic, minced

Preparation

Heat oil in a Dutch oven over medium heat. Cook onions in oil until soft, stirring frequently. Remove onions and set aside.

In a medium bowl, combine paprika, salt and pepper. Coat beef with the spice mixture, and brown in pot.

Return onions to the pot, and add in tomato paste, water, and garlic. Reduce heat to low, cover and simmer, stirring occasionally, for 2 hours, or until meat is tender.
