Mexican Curry

Ingredients
8 -12 soy burgers OR 3 pounds ground beef
1 medium onion, diced
24 ounces tomato sauce
24 ounces water
tablespoon oregano
tablespoon chili powder
1 tablespoon whole cumin seed
2 cups white rice (not minute rice)
Fritos corn chips
Shredded cheese
Shredded lettuce
Diced tomatoes
Chopped cilantro
Preparation

In 12 inch skillet, brown soy burgers or meat and onion, then drain. Add tomato sauce and water. Add spices, mix well and bring to a boil. Add rice, stir and cover. Simmer, stirring occasionally, until the water is absorbed, about 30 minutes. To serve, cover the bottom of a plate with corn chips. Scoop about 1/2 cup of the curry on top. Add toppings such as cheese and lettuce to taste.
