Szechuan Cold Noodles

Ingredients
1 cup cubed or shredded cooked chicken
2 cups bean sprouts
1 pound thin spaghetti or Chinese noodles
2 tablespoons sesame oil
1 tablespoon chopped peanuts (optional)
3 scallions, chopped fine
1 teaspoon ground ginger
1 tablespoon garlic, chopped fine
6 tablespoons sesame seeds
4 teaspoons sesame oil
10 tablespoons soy sauce
1 tablespoon Chinese oil (hot)
2 teaspoons sugar

TO MAKE SAUCE: In a blender, combine sesame seeds, sesame oil, soy sauce, wine vinegar, Chinese hot oil and sugar. Add ginger and garlic. Pour over chicken, sprouts, noodles. Sprinkle with scallions and peanuts. Refrigerate. Serves 4.
