Caramel Mocha Latte (Vegan Ice Cream)

Ingredients

1 cup brewed coffee- hot
1 cup sugar
1 cup milk substitute (recommend soy creamer or 1/2 cup cocoa powder
1 teaspoon chocolate liquor or vodka

Preparation

Mix together cashews, hot coffee, and sugar until sugar is completely dissolved. Add remaining ingredients and soak for 4 hours.

Blend mixture for a few minutes or until there are no chunks of cashew. Strain- be careful not to press the grounds through the strainer, simply separate the liquid from the solid. Churn in ice cream maker.

Fold in caramel sauce and freeze until firm. Serve in cone or dish.
