Hula Chicken

Ingredients

2 tablespoons Olive Oil
2 cloves Garlic, minced
8 thin slices deli Ham
4 slices Swiss Cheese-omit for dairy free
4 Pineapple rings, (canned)
1 Tablespoon Margarine (Nuccoa is dairy free)
1/2 cup fresh Mushrooms, chopped
1/2 cup Green Bell Pepper, chopped
1/2 cup Sweet Onion, diced
1/2 cup Mayonnaise
1 teaspoon prepared Mustard

Preparation

Preheat oven to 350 degrees.

Season chicken with salt and pepper.

Heat olive oil in a skillet. Brown garlic in oil, then add chicken and cook until nearly done. Do not overcook. Place on a baking sheet.

Heat butter in a small skillet. Saute mushrooms, peppers and onion until tender. Remove from heat and set aside.

Top each chicken breast with a pineapple ring, then 1/4 of the mushroom mixture, then 2 ham slices and then a slice of cheese.

Bake in a preheated oven for 10-15 minutes or until the cheese is melted.

Mix the mayonnaise and mustard together.

Serve the chicken with a dollop of mayonnaise mixture on the side.

Seem fancy without all the work! Easily made dairy free by omitting the cheese topping.
