Mediterraneo Tomato Pasta

Ingredients

1 whole garlic clove- slice it across horizontally and take top off
1 chopped onion (preferably yellow or white)
sea salt (to taste)
black pepper (to taste)
1 pound ground meat (turkey is healthiest, but chicken or beef i
15 piccholinos olives (pitted)
1 cup chopped/cubed feta cheese chunks

Preparation

Cover the garlic clove (cut side up) with olive oil, salt & black pepper. Bake at 350 for about 20 - 25 minutes or until golden/caramel color

Heat large pot on stove top and add 1.5 tblsp of olive oil (approximate)

Squeeze out garlic from cloves into large pot, caramelize slightly

Add 3/4s of chopped onions and saute for about 7 minutes or so on medium heat

Add crushed tomatoes, let sauce come to a lazy boil and simmer for minimum of one hour.

Add salt and black pepper and let simmer for another few minutes on low heat.

Saute ground meat separately with remainder of onions in separate pan. when completely cooked, add to tomatoe sauce. let cook together for half hour or so.

Boil pasta to preferred consistency. follow directions on box for well cooked/al dente consistencies.

Add pasta to sauce and turn off heat. let sit for ten minutes or so.

Add olives (chopped consistency is best) and feta cheese chunks.
