Breakfast Potatoes

Ingredients

Potatoes, sliced (according to number and size of potato
2 tablespoons shortening or fatback grease
1/2 tablespoon black pepper
1 teaspoon salt
2 cups water

Preparation

Preheat heavy black iron frying pan. Preheat shortening 10 to 15 minutes. Add potatoes to hot shortening. Add onions, salt, and pepper on top of potatoes. Put top on pan and steam cook 10 minutes on high. Stir every 10 minutes to brown potatoes. (Total cooking time is 20 minutes.) Add 2 cups of water and steam at high for 8 minutes until water recedes. Add 1 cup of water. Turn down heat to medium or low until thickens. Serve with sausage
