Green Vegetable Stir-Fry

Ingredients

1 tablespoon oil
1 onion, sliced
1 tablespoon John West Ginger Garlic &
Shallots Stir-Fry Mix
2 teaspoons John West Green Curry Paste
6 cups assorted sliced green vegetables
for example broccoli, snowpeas,
1 tablespoon Thai fish sauce
2 teaspoons John West Coriander
2 tablespoons finely shredded kaffir lime leaves, optional

Preparation

Heat oil in a wok or large frying pan over a medium heat. Add onion, stir-fry mix and curry paste and fry for 2 to 3 minutes. Add green vegetables and toss over the heat for 2 to 3 minutes, until bright green.

Add fish sauce and coriander, mix well and toss over the heat for I to 2 minutes. Serve with rice, stir-fries, or simple meat dishes.
