Tiramasu (easy & good)
Ingredients
1 pkg lady fingers Italian cookies (recipe calls for crisp cookie type- but have made my own and used the soft spongy ones from the deli)
1 box instant vanilla pudding (I use Jello brand not a store brand) original recipe calls for cooked type
1 tsp vanilla extract
1 large container marscapone cheese (find in the deli section or Italian specialty deli store)
2 cups very strong (espresso) coffee
1/3 cup of any of the following, (can omit this step) Kahula (any other coffee flavored liquor) or brandy
Preparation

It is better to make this early & let sit for a few hours or overnight so that the flavors can develop.

In a larger bowl, prepare the pudding to package directions.

When set, fold in the marscapone cheese and vanilla, set aside.

Combine coffee and liquor, if using, in a shallow bowl.

Open package of lady fingers.

For first layer spread about 1 cup of pudding mixture in bottom of pan.

For next layer, quickly dip ladyfinger into coffee and arrange in bottom of 13X9 pan.

Work quickly and do not drop lady finger in coffee as it will quickly dissolve.

(Alternate method: Arrange ladyfingers in bottom of pan & soak completely by spooning coffee on tops.)

Cover this bottom layer with 1/2 of the pudding mixture.

Lay another layer of coffee soaked ladyfingers.

Cover with remaining pudding mixture.

Decorate top of the Tiramsu with any of the following: cocoa powder, ground espresso beans, shaved dark chocolate or ground cinnamon.

This dessert is very rich.

Can make in any type of pan to get a taller piece with more layers.

I received this recipe over 15 years ago from a co-workers aunt. (I modified it slightly) I have never had so many compliments from anything else I have ever made. I get requests to bring this.
Yield:
13 x 9 pan 18 pieces, but depends on how you slice & serve
