Summer Ratatouille

Ingredients

3 tablespoons Olive oil
1 cup Peeled, diced eggplant
cup Chopped onions
cup Diced yellow squash
cup Diced zucchini
cup Peeled, seeded, chopped tomatoes
cup Fresh whole kernel corn - (1 ear of corn)
cup Chopped fresh basil
2 tablespoons Minced garlic
1 teaspoon Salt
Freshly-ground black pepper

Preparation

Heat oil in a large skillet and add all ingredients and 4 turns pepper. Stir-fry, stirring constantly, 3 minutes.
