Berry Vinaigrette

Ingredients

3 heaping tablespoons jam
2/3 cup olive oil
Sea salt, to taste
Freshly ground black pepper, to taste

In a small bowl, whisk the jam and vinegar together.

Slowly whisk the oil into the jam and vinegar mixture until well incorporated.

Add the salt and pepper and mix to combine. Adjust seasonings to taste.

Any jam can be used in this recipe: raspberry, blackberry, strawberry, apricot, etc. It's a great way to use those preserves in your pantry!
