Grilled Tuscan Chicken
Ingredients
3 pounds boneless chicken breast
1/4 cup balsamic vinegar
1/2 cup olive oil
1/2 cup finally chopped kalamata olives
1/2 cup sundried tomatoes reconstituted and finely chopped
1/2 cup minced sweet onion
1 bunch basil

Pound chicken breast to even thickness cut in half

Add onions and garlic and until clear

Add 1/4 of the olives

Add 1/4 cup sundried tomato add

Bunch chopped basil

Add red wine and balsamic

Reduce over medium heat for 5-7 minutes

Set aside to cool

Salt and pepper chicken breast

Pour 1/2 of the cooled marinade over chicken breast and refrigerate for up to 4 hours
