Pizza Sandwiches
Ingredients
2 tablespoons Oil
1/2 cup Onion, chopped
2 1/2 tablespoons Celery, chopped
2 1/2 tablespoons Green pepper, chopped
1 cup Tomatoes, canned
6 tablespoons Tomato paste
1 teaspoon Oregano
1/8 teaspoon Sweet basil
3/4 teaspoon Salt
1/8 teaspoon Pepper
1/4 teaspoon Rosemary, optional
1 1/2 cups Pizza sauce
1 1/2 cups Cottage cheese, lowfat
6 English muffins, toasted
4 tablespoons Parmesan cheese, grated
Preparation

Onion, celery and pepper in vegetable oil until tender and translucent. Add tomatoes, tomato paste and seasonings. Cook over low heat on stove top for approx. 30 mins, stirring occasionally.

Yield:approx. 1 1/2 cups sauce.
