Lemon Chicken and Rice

Ingredients

1 pound boneless skinless chicken breasts in chunks
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon paprika
1 tablespoon canola oil
1 cup long-grain rice uncooked
1/2 teaspoon oregano
1/2 teaspoon lemon zest grated
1 3/4 cups chicken broth
1 lemon juiced
1 tablespoon fresh parsley snipped(for garnish)

Preparation

Season chicken with salt, pepper & paprika. Brown chicken in oil in large nonstick skillet over high heat. Add remaining ingredients, except parsley;bringto a boil. Reduce heat, cover & simmer 20 to 25 minutes, or until rice is tender& liquid is absorbed. Fluff with a fork. Garnish with parsley.
