Lentil and Rice
Ingredients
1 1/2 cups red lentils
1 cup medium grain rice
1 tbs cumin
1 1/2 liters water (you might need to add more if it gets too thick)
1/4 cup extra virgin olive oil
1 large onion, chopped
salt
Lemon juice for serving
Sumaq (a tangy spice that can be found in Middle Eastern food stores)
Preparation

In a large pot and over medium heat, mix lentils, rice, cumin and water.

Bring to a boil and lower the heat and stir occasionally to prevent sticking

Allow to cook until lentils and rice are fully cooked

Add salt and a chicken stock cube (if you wish)

In a skillet, heat olive oil and saute the onion until transulsent in color and soft without changing color

Pour the hot oil and onion mixture over the cooked lentils and rice while keeping some of the onions for garnish

Pour in a serving bowl and garnish with reserved cooked onion and sumaq.

Serve with a splash of lemon juice.
