Polish Coffee Cake

Ingredients

3 packets dry yeast
1/2 cup warm water
2 tablespoons sugar
1 1/2 teaspoons salt
1 1/2 cups sugar
1 large can evaporated milk
1/4 cup (1/2 stick) butter
1 teaspoon vanilla extract
1 tablespoon lemon juice
1/2 cup sugar
1/2 cup soft butter
1 cup flour

Preparation

Beat eggs and salt until creamy. Add sugar and beat well until thick.

Warm milk and add butter to milk until melted. Add vanilla & lemon, mix flour, milk and yeast mixture alternately. Beat well. Put into 3 bread pans, 1/2 full.

Mix 1/2 cup sugar, 1/2 cup soft butter and 1 cup of flour to a crumb consistency ; sprinkle over pans. Let rise 1 hour or until double its size.

Bake 20 min at 375 then drop heat to 325 and bake about 30 minutes. Test with toothpick. Cover pans with a dish towel when cooling.
