Honey Mustard Crumb Chicken

Ingredients
4 chicken breast halves, skinned
1/8 teaspoon salt
1/8 teaspoon ginger
1 tablespoon honey
2 teaspoons Dijon mustard
1/2 teaspoon grated orange rind
1/4 cup corn flake crumbs
Watercress sprigs (opt.)
Orange slices (opt.)
Preparation

Arrange chicken, bone side down, in an 11"x7"x2" baking pan with thickest portions toward the outside of dish. Sprinkle with salt and pepper. Combine honey, mustard, orange rind and soy sauce in a bowl, brush chicken with this mixture. Sprinkle with crumbs. Cover with wax paper, microwave at High for 11 minutes or until chicken is done, rotating dish and half turn after 8 minutes. let stand, uncovered for 5 minutes. Garnish with watercress sprigs and orange slices if desired. Serves 4.
