Orange Raisin Cake
Ingredients
3/4 cup sugar
1/2 cup shortening
1 egg
1 cup sour milk
2 1/4 cup flour
1/2 tsp salt
1 tsp soda
1 orange
1 cup raisins
Preparation

In a mixing bowl, combine sugar and shortening until light and fluffy.

Add egg and combine thoroughly.

In a smaller mixing bowl, combine flour, salt and baking soda.

Alternate adding dry ingredients and sour milk to sugar mixture.

Grind orange and raisins together in a food processor until smooth. Add to batter.

Pour batter into a greased cake pan and bake at 350 degrees for 30 minutes, or until knife comes out clean when inserted into center of cake.

This is an old recipe from my MIL's recipe box. I have no other history on it. It's super cool, flavored with the orange and raisins being ground together. Enjoy!

I have a similar recipe I got 40 years ago. Never seen one like it before now. Mine called for grinding 2 orange rinds and the raisins and saving half to make a powdered sugar glaze/frosting with orange juice. Yummy!
