Potato & Spinach Pancakes

Heat frying pan with oil. Mix leftover mashed potatoes with drained can of spinach. Add 1 egg and enough matzo meal to make a nice pancake batter. Fry, leave on paper towels 1 minute to get off excess oil. Serve with sour cream.
