Celery & Onion Pickles

Ingredients

1 qt. vinegar
1/4 cup pickling salt
2 1/2 cups sugar
1 cup water

Preparation

Wash and soak cucumbers in ice water 1 hour or more. Drain and pack in jars with 1 stick of celery and onion to taste.

Bring to boil and pour over cucumbers. Add a pinch of alum to each jar. Seal and bring to boil in hot water bath. Let boil for about 5 minutes. NOTE: If you have many cucumbers, double the recipe and it will make about 7 quarts.
