Maddur Vade

Ingredients

1/2 cup All purpose flour (Maida),
1/2 cup Semolina (Rawa),
1/2 cup Rice flour,
1 cup Finely chopped onion,
4 spoons Coriander leaves finely chopped and curry leaves(if available) 4- 5, finely chop
Oil to deep fry and salt

Preparation

Mix all the above ingredients. Add salt to taste.

Put 4-5 t-spoons of hot oil and mix the mixture thoroughly so that the salt distributes evenly.

Divide the flour into 6-7 portions.

Take one portion and just sprinkle water and mix to to make a thick dough. (Do not pour water just sprinkle it)

Make balls and flatten it (just like you pat rotti) on a plastic sheet(I did not smear oil or water on plastic sheet). Make it thin(not ver thin).

Heat oil in a pan. When it is sufficiently hot, put the flattened vade and deep fry.

About

It is a famous snack of Maddur town in Mandya district, Karnataka, India. If we happen to travel via this town you can find people selling it in buses and trains. A very mouth watering snack.
