Banana Butter Cake

Ingredients
9 mediums bananas mashed
250 grams selfraising flour
2 level teaspoons baking powde
100 grams butter softened
200 grams caster sugar
2 eggs
Preparation

Grease and line two 450g loaf tins with greased greaseproof paper.

Spoon half of the mixture into each tin.

Slide on to the lowest set of runners in the roasting oven with the cold plain shelf on the second set of runners.

Check half way through cooking.

If the cakes are too brown slide in the cold plain shelf on the second set of runners.

Cool in the tins before removing.

This is an excellent way of using slightly over ripe bananas the ones that sit in the fruit bowl and everyone avoids! This mixture makes two fairly shallow loaf cakes. It is very similar to butter almond cake but with the flavour of bananas instead o f almonds.
