Simple Strawberry Pie

Ingredients

1 1/2 cups flour
1 teaspoon /2 sugar
1/2 teaspoon salt
1/2 cup coconut oil
2 tablespoons milk
2 cups whole strawberries
3/4 cup water
1 cup sugar
3 tablespoons cornstarch
1 teaspoon lemon juice

Preparation

Make Crust with the following:

Combine flour, 1 1/2 tsp sugar, salt, coconut oil, water in a bowl.

Press into pie plate and bake at 400 degrees for 15 minutes. Cool

Combine strawberries, 3.4 cup water over medium heat

Simmer mixture for 5 minutes

Add 1 cup sugar, cornstarch and lemon juice to berry mixture and continue to cook until thickened

Cool filling before placing into cooled pie crust

Chill until set

About

Just before serving, halved strawberries on top of the pie, overlapping in a pleasing pattern if desired. This pie is fantastic with homemade whipped cream.
