Diana Kennedy's Late Summer Guacamole

Ingredients

1 small onion, finely chopped
2 serrano chillies, finely chopped
4 ripe, firm peaches, peeled and finely diced
A handful of seedless grapes, halved
The juice of one lime
The seeds of a pomegranate
salt

Preparation

Put the onion and chillies in bottom of a mortar or molcajete (Mexican mortar) and crush to a paste with a couple teaspoons of salt.

Stir in the avocado pulp, peaches, grapes and half the pomegranate seeds. Season to taste with lime juice and more salt, if necessary.

Serve at room temperature with tortilla chips
