Diana Kennedy's Late Summer Guacamole
Ingredients
1 small
onion,
finely chopped
2 serrano
chillies,
finely chopped
5
avocados
4 ripe, firm
peaches,
peeled and finely diced
A handful of seedless
grapes,
halved
The juice of one lime
The
seeds
of a pomegranate
salt
Preparation
1
Put the onion and chillies in bottom of a mortar or molcajete (Mexican mortar) and
crush
to a paste with a couple teaspoons of
salt.
2
Stir
in the avocado pulp, peaches, grapes and half the
pomegranate
seeds.
Season
to
taste
with lime
juice
and more
salt,
if necessary.

Serve
at room temperature with tortilla chips
