Vegan Bean & Potato Soup

Ingredients

2 cups dry beans (soaked and drained), or 2 cans of beans
5 red potatoes (depending on size and how much you like potatoes)
1 teaspoon minced garlic
1/2 cup pearled barley (optional)
4 cups water
2 teaspoons vegetable oil
2 bay leaves
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon black pepper
1/2 teaspoon thyme

Preparation

Chop vegetables.

Saute onions and garlic in vegetable oil.

Add all ingredients other ingredients.

Simmer for app. 1 hour.
