Four Pepper Relish
Ingredients
2 lrg red bell peppers seeded, chopped fine
2 lrg green bell peppers seeded, chopped fine
2 lrg yellow bell peppers seeded, chopped fine
2 smalls fresh hot chile pepper seeded, chopped fine
2 mediums red onions finely chopped
cups white wine vinegar
1 cup sugar
1 1/2 chopped fresh coriander
2 teaspoons salt

Return the vegetables to the pan and add the remaining ingredients. Bring the mixture to a simmer over low heat and cook for 5 minutes. Let cool, pack into hot sterilized jars and attach the lids.

Process in a boiling water bath for 5 minutes. Remove from the water and cool completely at room temperature.
