Mashed Sweet Potatoes With Ginger and Sage

Ingredients

4 pounds sweet potatoes, peeled, halved lengthwise and cut into ½ inch slices
1 cup water
4 teaspoons butter
1 teaspoon dried sage
1/2 teaspoon dried ginger

Preparation

Set a rack on the bottom of a large pressure cooker

Pour in the water, add the sweet potatoes and lock the lid in place

Bring to pressure over high heat

Reduce heat just enough to maintain high pressure; cook for 5 minutes

Turn off heat and quick-release the pressure. (Sweet potatoes should be tender and uniformly cooked)

Drain the potatoes in a large colander and remove the rack from the cooker

In the cooker, melt butter over medium-high heat, then reduce heat to low

Stir in the ginger and sage

Add the sweet potatoes and mash with a potato masher
10
Season well with salt; add more sage and ginger to taste, if necessary

Garnish with pine nuts and serve hot
