Holiday Icebox Cake
3 cups heavy cream
3 tablespoons confectioner's sugar
1 tablespoon vanilla extract
2 packages Nabisco Famous Chocolate Wafers
In the bowl of a kitchen mixer, such as a KitchenAid, fitted with a whisk attachment, add the cream and beat on high until firm peaks form. Reduce the spread and add the the sugar and vanilla. Set the shipped cream near your work station.
On a plate, use an offset spatula to spread a thin layer of whipped cream to hold the bottom layer of cookies in place. Place 1 cookie in the center and arrange 7 cookies side by side in a circle.
Spread about 2/3 cup whipped cream on top of the cookie layer, forming a 7-inch circle. Repeat the above process with remaining cookies and cream. You should have 11 or 12 layers of cookies and ending with a layer of cream. Cover with plastic wrap and refrigerate overnight. Serve chilled.
