Oatmeal-Buttermilk Loaf

Ingredients

1/2 cup warm water
1 beaten egg
2 tablespoons vegetable oil or butter
3 tablespoons dark brown sugar
(or use honey, white sugar or 1/2 cup Quaker oats
3 1/4 cups white bread flour
1 tablespoon enhancer
1 1/4 teaspoons salt
1 1/2 teaspoons SAF instant yeast
teaspoon (or 2 active dry yeast)

Preparation

Place the ingredients in the bread pan in the order recommended by your machine's manufacturer. Process on the Basic cycle, Light Crust setting.

Watch dough if you bake in the machine; it will be a lid-thumper.

Oven baking: Form one large loaf (12- by 4-inch) or two smaller ones (9- by 5- inch), slash 3 times. Rise to almost double volume. Use nonstick sprayed plastic wrap to cover rising dough. You could also divide this into 24 rolls baked on sheet or in muffin cups.

Bake in 350 degree oven for 35 to 40 minutes until golden. Cool completely before slicing. Excellent toasted.

This recipe yields a 2 pound loaf.

Comments: The aroma from baking bread with dark brown sugar or maple sugar is wonderful; try it at least once.
